It all started with a degree in Organizational Sciences, but then Alfio Nicolosi‘s path veered off on a new tangent: enrolling at the Academy of Haute Cuisine, he followed a comprehensive training programme, alternating theoretical knowledge learned at the school with traineeships and jobs in top-end restaurants in Italy and abroad. It was this path that has ultimately led him to now open his first restaurant in Saronno in the northern province of Varese, named Sui Generis

Here, Chef Nicolosi cooks up a conceptual food offering, harmoniously bringing together all elements of the restaurant, from the interior design to the dishes’ aesthetic presentation. Everything is conceived to maintain a wonderful balance, designed to offer the customer a unique fine dining experience, which clearly all starts with the dishes that Alfio comes up with each time, in an ever-evolving menu.

The whole menu, the whole project is designed to evolve, to grow, to change, in a sort of journey through space and time, where space is seen as the blend of ingredients, techniques and reimaginings that become the hallmarks of my cuisine as it morphs into something new.” 

An ambitious, fully conscious project packed with drive, in which two ingredients are key: the human factor, courtesy of a young team powered by passion, and strong allies well versed in delivering safety and reliability, especially in the kitchen: “When it comes to cooking, for example, I don’t have one favourite method, I choose a range of different preparation and cooking techniques, even just for my tasting menu.” 

To get unbeatable efficiency, with top performance, harnessing the latest technologies, Alfio Nicolosi has decided to team up with a partner drawing on over 50 years of history in the kitchen industry, GICO. “I chose GICO because I went to see the company, saw how they worked… I got to see the products with my own eyes, and there was no doubt in my mind that this was the best choice for my business.

And Alfio Nicolosi has partnered with GICO to create his kitchen, a tailor-made monobloc island suite: a decision that was as much about effortless operation and high performance as it was about uncompromising aesthetics – “I have a kitchen that sits in full view of the dining room, so I wanted my kitchen to almost be part of the decor.”
