GICO aids learning: our new partnership with Maestro Martino and a project at Villa Terzaghi, Carlo Cracco’s cookery school just outside Milan.

Villa Terzaghi is a new teaching and cultural format by the Maestro Martino Association, founded in Milan in 2011, together with chef Carlo Cracco, who now chairs the association, and whose aim is to nurture the talents of young Italian cooks. 

The heart of the project is Villa Terzaghi, a stupendous historic building at Robecco sul Naviglio, just outside the Lombardy Region’s capital.

It is a Teaching Restaurant created for students, professionals and food lovers, the purpose of which is to train the up-and-coming young protagonists of Italian cuisine by recreating real, hands-on kitchen conditions.

The project will be implemented in 2021 and involve young cooks who have graduated or are graduating from the hotel management schools in Lombardy. The project will provide participants with their first contact with the world of work, in a teaching context in a proper restaurant open to the public.  The initiative has been made possible through the Association’s cooperation with its chairman Carlo Cracco and several celebrities in the trade. 

At GICO we have provided our top performing kitchen equipment, safe and sustainable, to offer young cooks an opportunity for practical experience in exalting our country’s food and wine traditions. This value has been close to our hearts for half a century, transmitting all the care and passion we put into our work.

As Chef Cracco confirms, the project’s aim is to provide training on the job that enhances and completes the teaching organisation of State education. <<The students will have the opportunity to work with professionals throughout the supply chain (from the farmer to the processor and cook), use the best kitchen equipment and technologies, and face the public from day one with a proactive, constructive logic.>>

The Villa Terzaghi project was presented a few days ago and teaching activities are due to begin soon.  The budding young professionals studying at Villa Terzaghi will be able to put into practice what they learn during Masterclasses held by guest teachers, renowned protagonists of Italian food and wine, including Paolo Griffa, Andrea Besuschio, Oliver Piras, Daniel Canzian and many others, on a GICO series G9001 modular cooking suite, under the direction of Resident Chef Federico Urbani.
