The Pulejo restaurant kitchen

Together with chef and owner Davide Puleio, we discover the project created ad hoc for the recent opening of his Ristorante Pulejo, a gourmet address in the centre of Rome.

A restaurant that is the spokesperson for a young, pragmatic, materialistic cuisine, the result of a philosophy that is attentive to raw materials, the environment and the fruit of the chef’s various experiences between the north and south.

For the restaurant, GICO designed a tailor-made modular system, meeting the chef’s primary requirements:

  • the optimisation of space
  • the customisation of body colours
  • the preference for express cooking, with electric induction and all-stove equipment
  • the need for ample support and preparation space
  • the request to create a separate pastry area

… and much more.
