CHIC CONGRESS 2019: IN THE KITCHEN TOUR takes off again at high altitude

Gico confirms it’s partnership with CHIC, the Association that brings together the fine dining scene’s best chefs. CHIC also marks an important milestone this year: its 10 year anniversary, celebrated in an exclusive location.

Monday April 15th the annual CHIC – Charming Italian Chef Congress – took place in Courmayeur. The breathtaking view from the Skyway Montebianco and its Pavillion served as the dramatic backdrop of this event.

In this location the Association presented their new edition of the 2019/2020 Guide during a press conference, along with new projects linked to the restaurant industry and the calendar of events set for the coming year.
17 new CHIC associates
were announced, bringing the total number to 123 partners of different disciplines.

The main theme for 2019 will be sustainability as a daily habit. This was the topic discussed during the two-part interview projected during the congress with Valeria Ongaro, owner of GICO – for the third year CHIC partner, and Paolo Griffa, chef of Petit Royal di Courmayeur. The chef, who has chosen GICO for his restaurant, describes the company with three adjectives: sustainable, functional and tailor made.

What is sustainability for them?  For Valeria Ongaro it’s taking care of the environment by using sustainable materials – indeed the company has always used high-quality, long lasting materials that are 95% recyclable. For Paolo Griffa sustainability is knowledge above all, knowing how to respect products and their nutritional value. His dishes follow the cycle of nature, adhering to an aesthetic and to flavors that change depending on the season.

The Congress thus kicked off the new seasons of the In The Kitchen Tour, a series of BtoB events that promotes and shares the best products from a range of regions through collaborations between CHIC Chefs who meet in creative culinary jam sessions within our ver-changing kitchens.
