GICO X SENSO AT MART *, ROVERETO – TRENTO

We met Michelin-starred chef Alfio Ghezzi, directly in his Ristorante Senso at Mart Museum of Modern and Contemporary Art of Rovereto and Trento. 

Here, beauty and art are not only protagonists in the rooms of the museum, but also on the table: they respond to the desire to leave a trace of themselves in people, to the desire to excite. The chef applies this philosophy at two different times: bistro for lunch and fine dining restaurant in the evening.

Two souls that find their raison d’être in Italianness, simplicity and taste. Two souls that, however, must be expressed in their best version, through a kitchen that allows this, a kitchen that is first and foremost functional and versatile, given the difference in service from lunch to dinner. 

Alfio Ghezzi’s choice fell on GICO, for two reasons. The first is versatility: “I requested that my custom-made kitchen have a very large pass, because ours is a very different service from lunch to dinner. Especially in the bistro context there can be a large turnout, so it is essential that several courses can also flow on the pass at the same time,’ the chef explained to Colognese.

The second is reliability: “Those who, like me, spend most of their time in the kitchen, expect their kitchen to be reliable. That’s why I chose GICO: with this tailor-made solution I can create a close relationship based on trust and ensure that the ‘machine’ element gives me all the reliability I need,” added Ghezzi.
